Organic ingredients
1/2 cup basmati rice- organic grown in India
1/2 cup mung beans
1/3 cup cilantro
2 TBSP ghee or avocado oil
3/4 inch of fresh ginger
1/4 TSP pink salt
1/2 TSP turmeric
1/2 TSP fennel seed
1//2 TSP cumin seed
1/2 TSP coriander Seed
4 1/2 cups of water
The above is a basic kitchari recipe, you can add veggies based on season OR your individual constitution!
Soak the mung dal for a few hours, ALWAYS soak rice for at least 8 hours and rinse, this is a pre-digestive process for the rice and mung beans.
Place ginger, cilantro and 1/2 cup water into a food processor/blender to liquefied.
Heat the ghee on medium in a large saucepan and add the blended items, turmeric, fennel, cumin, coriander and salt. Stir well and bring to a boil to release the flavor. Next mix in the rice, mung dal stir in those flavors and now you can add the four cups of water, (if you decide to add veggies now is the time to add them.) Return to a boil. Boil, uncovered, for five minutes. Then cover, leaving the lid slightly ajar. Turn down the heat to simmer and cook for 25-30 minutes, until the dal and rice are tender.
